Strawberry tapioca recipe from Hawaii Prince Hotel’s executive chef

Trini chats with Hawaii Prince Hotel’s Wade Gesteuyala and Executive Chef Kirby Wong. They tell us how their celebrating the hotel’s 25th anniversary and show us how to make strawberry tapioca. Yum!


Administrative Professionals’ Day Luncheon

Wednesday, April 22, 2015, 11am – 1pm

Strawberry Tapioca Recipe



4oz. Tapioca Pearls

1 qt.Water

7 oz.Sugar

20 oz. Coconut Milk

Mint Sprig (garnish)


Bring water to a boil, add tapioca pearls and simmer for10 – 15minutes, stirring occasionally. Remove from heat and pour into mixing bowl, adding sugar and coconut milk into mixture. Let mixture cool and it will thicken as it cools.


Strawberry Sauce


24 pcs. Fresh Strawberries

1 Tb. Sugar

1 Tb. Butter

2 Tb. Water


Cut strawberries in halves and save half for garnish, and sauté the other half with butter, sugar and water till soft. Blend and use for topping or bottom of serving dish.


Place Sauce on the bottom of serving dish, add tapioca, and garnish with strawberries and mint leaves.
