Strawberry Tapioca Recipe
4oz. Tapioca Pearls
20 oz. Coconut Milk
Mint Sprig (garnish)
Bring water to a boil, add tapioca pearls and simmer for10 – 15minutes, stirring occasionally. Remove from heat and pour into mixing bowl, adding sugar and coconut milk into mixture. Let mixture cool and it will thicken as it cools.
24 pcs. Fresh Strawberries
1 Tb. Sugar
1 Tb. Butter
2 Tb. Water
Cut strawberries in halves and save half for garnish, and sauté the other half with butter, sugar and water till soft. Blend and use for topping or bottom of serving dish.
Place Sauce on the bottom of serving dish, add tapioca, and garnish with strawberries and mint leaves.
