Kanoe Gibson’s Fish Tacos

It’s Thursday so we’re heading to Hawaii’s Kitchen!  KHON2’s Kanoe Gibson is our guest chef today. She’s sharing with us one of her family’s favorite recipes…fish tacos!

For fish:
1 lb fresh white fish cut into cubes (Mahi or Ono)
1/4 c olive oil
1 lime juiced
1/4 c taco seasoning

For slaw:
1/4 head white cabbage shredded
1/2 large red onion diced
4 Roma tomatoes diced
1/2 c cilantro
1 jalapeño without seeds finely diced
1 lime juiced
1/4 c taco seasoning
1/2 c sour cream
Salt if needed

Other ingredients:
Mexican cheese
Hot sauce
Lime wedges

Marinate fish in oil, lime juice and taco seasoning in a Ziploc bag while prepping slaw.  For slaw, dice all veggies and mix with sour cream, lime juice and taco seasoning.
Once slaw is complete, sauté fish and marinade over medium high heat for a couple of minutes until cooked through (don’t overcook!).
Serve fish over warmed corn tortillas, Mexican cheese, slaw, and lime for garnish.  Add hot sauce as desired.
