Hawaii’s Kitchen: Bali Steak and Seafood at the Hilton Hawaiian Village



Chef Joseph “JJ” Reinhart is Chef de Cuisine of Bali Steak and Seafood. They are located at the Hilton Hawaiian Village and is a perfect location for both visitors and locals alike to check out the ocean view.

Chef JJ is making Hawaiian Moonfish (Opah) with Star Fruit Chutney and Chermoula Sauce.

 

 

Star Fruit Chutney
Ingredients:
1 **Each onion, sweet
1 **Each shallot
1 Ounce ginger
2 Ounce scallion whites
3 **Each star fruit
2 **Each oranges, segments and juice
1 Clove garlic
1 teaspoon coriander
1 tablespoon lime juice
2 Ounce rice vinegar
1/4 Cup golden raisins
1 to taste kosher salt
1 to taste white pepper
2 tablespoon butter

 

Sweat Onion and Shallot over medium heat until translucent. Add remaining ingredients and bring to a simmer. Cook until all fruit has softened. Season.

 

Chermoula Sauce

Ingredients:
1 teaspoon cumin
10 Ounce parsley
10 Ounce cilantro
2 Clove garlic
1 teaspoon smoked paprika
2 teaspoon lemon juice
1/2 Cup blended olive oil
1 teaspoon salt
1/2 ounce sambal oelek

 

Combine all Ingredients in a blender. Blend until Smooth. Adjust seasoning as needed
